Soup Recipe

Upon request I hereby give you 'my' Curried Zucchini Soup recipe. I found it in "The New Basics Cookbook", written by Julee Rosso & Sheila Lukins.
I personally don't add any cream to the soup since the soup becomes very creamy anyway with the potatoes in it. (plus who needs those extra calories, especially this time of year?!)  <wink>

The soup is quite spicy (which I like personally) so watch the amount of curry you put in. This soup has been proven a winner for the past 20 years or so since I have been making it, so let's get cooking!

I've been very busy on a Photoshop project for a friend of mine and Little Bit will be starting up again next week, but I'm sure I'll find some time here and there to do some posting again. Until then: Cheerio!

  1. Mmm, thanks for posting that. I hope we will have an excess of zucchinis soon so I may be able to use this recipe!

  2. Ha, lijkt me een heerlijk recept. Alleen, wat is broth? Mijn Engels is niet zo bijster geweldig ;)

  3. I need to remember this one for Winter. Heat producing appliances are under lock down after the hottest day this year. I may have zucchinis growing by mid year although they all look a tad wilted this afternoon, poor dears!

  4. Het recept sla ik op. Ik ben gek op soep. Broth-bouillon.
    Fijne week, groetjes
